The unique ID generated for a CDDB is based in part on the number of tracks and the total running time of the CD. Adaptec's EZ CD Creator software does not preserve the time of the gaps in between tracks on an audio CD, which can give you a different total running time on your copy. This will cause CDDB to generate a different ID than the original. Adaptec's CD Copier works in track-at-once mode which adds a 2-second pre-gap in between tracks. You can avoid this by using Disc-At-Once mode in CD Creator, but this requires you have everything saved as .WAV files on your hard drive first (the result is no pre-gaps at all, which still doesn't help your CDDB problem). Adaptec is coming out with version 4 of their CD Creator software sometime this month which supposedly addresses this issue and also adds CD-Text support (keep in mind CD-Text also requires a CD Recorder that supports this feature).
